Ingredients:

• 5 cups water
• 1 bay leaf
• 10 dried Shiitake mushrooms
• 1 tablespoon porcini mushroom powder
• one hot pepper, optional
• 4 oz chicken breast cubed
• 1-3 Garlic cloves, crushed and diced according to your own taste
• 1 1/2 bell peppers, any color
• 4 spring onions, chopped
• 1 package of noodles, such as without the flavor packet
• 1 tablespoon soy sauce approximately or to taste
• Chinese parsley for garnish (cilantro)

Preparation:

Simmer the dried shitake mushrooms, bay leaf, porcini mushroom powder and hot pepper in the water until the mushrooms are soft. Remove, slice and return the Shiitakes if desired. Add chicken and the garlic and resume the simmer.

Add the noodles, I like to break a brick of Ramen style noodles into four pieces. Cover and simmer for 10 minutes Ad the peppers and the spring onions and cook until they start to soften. Season the broth with soy sauce if desired, garnish with the Chinese parsley and sever immediately.
